My Favorite Cheesecake Recipe

I've baked a LOT of different desserts, but my absolute favorite has to be this no-bake cheesecake with berries. I've made it three times, and everyone in my family loves it each time! It's perfect for anyone who doesn't want an overbearing cheesecake because the fruits help "lighten" the richness of the cream.

Ingredients:

10 graham crackers

1/2 cup melted butter

8 oz softened cream cheese

1/4 cup maple syrup

1 cup blueberries

1 cup strawberries

4 tablespoons water

2 tablespoons lemon juice

1/4 cup sugar

2 tablespoons cornstarch

  1. crush graham crackers in a bag or food processor, and mix with melted butter

  2. firmly press crumbs evenly into a pie dish (9 inches), and place in the fridge to set

  3. whisk softened cream cheese with maple syrup and pour into the pie crust and then return it to the fridge

  4. add half of the blueberries and half of the strawberries into a saucepan over medium heat. add in lemon juice, sugar, and half of the water. cook for 2-4 minutes until sugar is dissolved

  5. mix the remaining half of the water with the cornstarch and add it to the berry mixture. cook for another 2 minutes until the filling thickens. take it off the heat and allow the mixture to cool for a few minutes.

  6. pour the berry mixture over the cream cheese layer and distribute the remaining fruits on top.

  7. place in the fridge to set for 1.5-2 hours (or overnight). serve and enjoy!


Some additional tips I would mention are:

  1. you can substitute the graham crackers and butter for a store-bought pie crust. the graham crackers are very crumbly, but personally i like it because it has a great, buttery taste to it.

  2. allow the pie to sit at room temperature for a little bit before serving because it makes it easier to cut and remove slices.

This dessert is very easy and doesn't take as time as you'd think to make it. So, next time you're craving something sweet, consider making this no-bake fruit cheesecake for yourself, your family, or your friends!
